Tonight I tried a new fruit I had never heard of until this evening. It’s called a Litchi. I’ve included a picture, because it’s kind of hard to describe without actually looking at it. I guess I would say it’s like a strawberry that is wearing an alligator suit.

For those of you who feel “fruit adventurous” here is a quick way to prepare your litchi fruit:

1. Use a sharp knife to cut all the way down to the seed lengthwise.
2. Carefully peel away the tough outer skin along with the inner thin membrane to expose the litchi meat.
3. Discard skin.
4. Remove litchi meat from inedible seed. It should release from the seed fairly easily using a knife or your fingernail.
5. Discard seed
6.Raw litchi pulp may be eaten as is for a snack or used in fruit salads, dressings, chicken salad, etc.

It has a grape texture and sweetness to me. I’m still trying to figure out what else you can do with it. It’s really good in Vitamin C, and is supposedly great for assisting in digesting your foods.

It’s definitely not a common fruit in the USA.  This is the first time I’ve ever seen it.  Awwww, the adventures in cuisine continue!
